Baked Oatmeal
  • 4 c. hot water
  • 1 tsp. salt
  • 3 c. oats ( I like quick oats)
  • 1/2 c. coconut
  • 1/2 c. chopped dates
  • 1 to 2 Tbsp. olive oil
  • 1/2 c. sunflower seeds (opt.)
  • 1/4 tsp. cardamom
  • 1/2 tsp. coriander

Boil water and salt and add to the rest of the ingredients in a 9x14 Pyrex dish.  Bake at 375 degrees for 30-40 minutes.  Leftovers are good room temperature and sliced into bars.
