Blackberry Cobbler
  • fresh or frozen blackberries
  • water
  • 1/4 to 1/2 tsp. salt
  • 1/2 to 1 tsp. lemon juice
  • Stevia to taste or honey
  • 1 to 2 Tbsp. cornstarch
  • whole wheat biscuits dough

Put blackberries in sauce pan.  Add about 3/4 as much water as there are berries.  Add salt, lemon juice, and Stevia (or other sweetner).  Simmer for 10 minutes.  Mix cornstarch with a little COLD water in a small cup.  Add this to the simmering pot as you stir.  Add enough cornstarch to make it thick.  Place in Pyrex dish.  Your berries should be about 2 inches deep in your Pyrex dish.  Spoon biscuit dough on top and bake at 400 degrees for 20 minutes.  Let it sit for 15 minutes before serving.  I like to serve it with some non-dairy whipped topping or cashew cream.  I hope you like it.  This can be done with any other fruit.
