Dice cucumbers and tomatoes and onions to bitesize pieces, slice olives, and juice lemon. Combine all ingredients in a bowl and refrigerate for 15 minutes.
Variation: Add diced tofu that has been simmered in 1 Tbsp. chicken-style seasoning and 2 c. water and drained.
